upside down tuesday

I really had a lot to say this morning. That was until the day turned upside down. So instead I will leave the best most comforting salad in the world. After the impending home repair, I plan on getting caught up on my blog reading and doing a little crafting. I'll be back tomorrow.

This salad is so good I barely had time to get a photo of it. They ate it in spoonfuls from the bowl. Note to Self: Place in individual bowls before announcing what's for lunch.

Lentil Salad

  • 1 cup of lentils
  • 5 tomatoes
  • 1 zucchini
  • 7 oz of spinach
  • 1/2 of red onion
  • 2 tbsp olive oil
  • 1 clove of garlic
  • Juice of 1 lemon
  • Salt to taste
  • Ground Black Pepper

Cook the lentils in a sauce pan filled with water just covering the lentils for about 20 minutes or until cooked. While the lentils are cooking,chop the tomatoes,zucchini,spinach,onions and garlic. Add the olive oil lemon juice,salt, and pepper. Mix well. Drain the water off the lentils. I let my lentils cool but you can use them warm as well. Throw in the lentils, stir and serve.
